What is specific to the Philadelphia area
Pennsylvania liquor licensing is restrictive and expensive, and a large share of suburban restaurants trade food only or BYOB because of it. That changes what the system needs to do. There are no bar tabs to babysit, but corkage, dessert and coffee carry more of the check, and the build should reflect where your money actually comes from.
The suburbs are not one district. They are a long chain of small downtowns through Chester, Montgomery and Bucks counties, full of independents and two or three location groups rather than chains. Several of the operators we support here grew exactly that way.
Winter matters more than it does in our western markets. From December through March takeout and delivery carry a bigger share of trade, so the online ordering path and the kitchen routing have to hold up when the dining room is quiet and the back of house is not.
