What is specific to San Diego
San Diego runs its patios year round, which sounds like a pure advantage until you count how much of your service happens away from a fixed terminal. Handhelds that hold signal across a large outdoor space, and card readers that keep working after a day in direct sun, are not accessories here. They are the system.
The other pattern is beer. Taprooms and brewpubs need tabs opened and held for hours, pours and flights tracked properly, and a fast way to close out a room that fills all at once when an event lets out. That is a different build from table service, and we set it up as one.
Summer at the coast and a quiet February are effectively two different businesses. Seasonal staff have to learn your system in a shift, not a week, which is a build decision more than a training decision.
