Spokane runs a genuine four season swing. Riverfront and downtown patios fill in summer and empty in January, and a lot of operators here run a smaller winter menu with a smaller crew. A Point of Sale that makes seasonal menu changes painful becomes a tax you pay twice a year. We build menus so you can switch them without calling anyone.

There is also a strong university and event crowd, which means sharp peaks. Kitchen display routing and handhelds do more for throughput on those nights than adding another terminal.
