What is specific to Napa Valley
A valley restaurant is rarely just a restaurant. Many of the rooms we support run a kitchen and a wine program side by side, and the owner wants those read separately at the end of the night. That is a reporting decision made when the system is built, not a report you can bolt on later.
Harvest changes everything. From late August into October the valley fills, midweek starts trading like a weekend, and a room that was comfortable in June is suddenly turning covers it was never staffed for. Your system has to let you add and train people quickly, and it has to hold up on the busiest service of the year.
Coursed, high check average dining is normal here rather than exceptional. Fire timing, seat numbers and course holds need to be right in the build, because a server should not be fighting the terminal in the middle of a tasting menu.
