What is specific to Sonoma County
Sonoma is not one restaurant district, it is a dozen small downtowns spread over a wide county. Groups here tend to grow by opening in the next town rather than the next block, so the system has to hold one menu across several addresses and still let each room price and staff itself. Several of the operators we support run four or more locations that way.
Power is a real design constraint here in a way it is not in most markets. Between wildfire season and public safety power shutoffs, every operator we work with has served through an outage.
