What is specific to Monterey
The Peninsula runs on event weekends. Car Week in August, the AT&T Pro-Am in February and the jazz festival in September do not gently raise trade, they multiply it for a few days and then it is over. Those weekends are when a Point of Sale either holds or embarrasses you, and they are exactly when you cannot afford to be on hold with a call center.
Waterfront and tourist rooms live and die on turn time. Handhelds and a well built kitchen routing setup are worth more here than almost anywhere, because the difference between a forty minute table and a fifty five minute table is a whole extra seating on a Saturday.
Salinas is a different business in the same county. Agricultural work sets the clock, kitchens frequently run in Spanish, and the traffic is early and steady rather than concentrated at night. We build for whichever of those two you actually are.
