What is specific to Seattle
Washington has no tip credit, and the Seattle minimum wage is among the highest in the country. A lot of operators here have moved from tipping to a service charge because of it. Both models have to be set up correctly in the Point of Sale, including how the charge is recorded and how it reaches the people it is meant for. Get that wrong and you have created a payroll problem rather than solved a labor one.
Order ahead is a primary channel here, not a bonus one. Coffee and counter service in particular run a large share of their day through a phone before anyone reaches the counter, so the ordering path and the kitchen routing have to be built as one thing.
The region is long and thin, from Bellingham down to Olympia. Groups end up with locations an hour or more apart, which makes central menu and price management the difference between one change and five separate evenings of work.
